Ingredients

Units Scale

For the Muffins

  • 2 cups (240 grams) all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (100 grams) granulated white sugar
  • 1/4 cup (56 grams) unsalted butter, melted
  • 1 cup (240 ml) milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Cinnamon Swirl

  • 2 tablespoons (28 grams) unsalted butter, melted
  • 1/4 cup (50 grams) brown sugar
  • 1 teaspoon ground cinnamon

For the Cream Cheese Frosting

  • 2 ounces (56 grams) cream cheese, softened
  • 2 tablespoons (20 grams) powdered sugar (adjust to taste)
  • 1 tablespoon (15 ml) milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar.
  3. In a separate medium bowl, combine the melted butter, milk, eggs, and vanilla extract. Whisk until everything is well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are totally fine!
  5. In a small bowl, mix together the melted butter, brown sugar, and ground cinnamon for the cinnamon swirl. Stir until it forms a thick paste.
  6. Spoon about one tablespoon of muffin batter into the bottom of each lined muffin cup.
  7. Add a generous spoonful of the cinnamon swirl mixture over the batter in each cup.
  8. Divide the remaining muffin batter evenly among the cups, topping the cinnamon swirl layer.
  9. Use a toothpick or a small knife to gently swirl the cinnamon mixture into the batter in each muffin cup. Aim for a pretty marbled effect!
  10. Bake the muffins in your preheated oven for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  11. While the muffins are baking, prepare the cream cheese frosting. In another small bowl, use a hand mixer to beat together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.
  12. Once the muffins are baked, remove them from the oven. Let them cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely. This is important for frosting!
  13. Once the muffins are completely cool, pipe or spoon the cream cheese frosting over each one. For an extra touch, lightly dust a little cinnamon over the glaze.

Notes

  • Do not overmix the muffin batter. A few lumps are fine; mixing too much can make the muffins tough.
  • Make sure your cream cheese is softened for the glaze. This helps create a smooth, lump-free texture when you beat it.
  • Cool the muffins completely before adding the glaze. If they are warm, the glaze will melt and run off.
