These fudgy pumpkin marbled brownies start with a dense chocolate base topped with a pumpkin spice swirl! They are chewy, dark and rich. If you are worried that adding pumpkin will turn your chocolate brownie cakey, the egg yolk and flour in the swirl set it smoothly so the base stays thick and fudgy. You do not need an electric mixer for this recipe, just two mixing bowls, a whisk, and basic pantry staples! For the chocolate layer, I use both melted semisweet chocolate AND unsweetened cocoa powder. The melted chocolate provides structure, while the cocoa powder gives us an intense, deep dark chocolate taste.

Whisking the eggs and granulated sugar for a full three minutes is non-negotiable here! This step dissolves the sugar and creates that papery, shiny crust across the top as it bakes :)

  • Keep the swirl simple – Drag a butter knife through the pan in a simple zigzag pattern a few times, as over-mixing blends the pumpkin into the chocolate instead of leaving clear ribbons.
  • Watch the bake time closely – Pull the pan from the oven when a toothpick inserted into the centre comes out with moist crumbs rather than wet batter.
  • Chill for neat slicing – Let the brownies cool completely in the pan, then place them in the refrigerator for an hour so you can cut clean, sharp squares.

Ingredients

Chocolate Batter

  • 3/4 cup (170 g) unsalted butter, melted
  • 4 oz (115 g) semisweet or bittersweet chocolate, chopped
  • 2 large eggs
  • 3/4 cup (150 g) granulated sugar
  • 1 tsp (5 ml) vanilla extract
  • 2/3 cup (85 g) all purpose flour
  • 1/3 cup (28 g) unsweetened cocoa powder
  • 1/2 tsp (3 g) salt

Pumpkin Swirl

  • 1/2 cup (120 g) pumpkin puree, make sure this is pure pumpkin, not pie filling
  • 1 large egg yolk
  • 3 tbsp (38 g) granulated sugar
  • 2 tbsp (16 g) all purpose flour
  • 1/2 tsp (1 g) ground cinnamon
  • 1/4 tsp (0.5 g) ground ginger
  • 1/8 tsp (0.3 g) ground nutmeg
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Melt the butter and chopped chocolate together in a heatproof bowl until smooth. Set it aside to cool slightly.
  3. Whisk the eggs and granulated sugar in a large bowl for 3 minutes until the mixture appears pale and thickened.
  4. Whisk the cooled chocolate mixture and vanilla extract into the eggs.
  5. Sift the flour, cocoa powder, and salt into the chocolate mixture and fold until combined.
  6. Pour the chocolate batter into the prepared pan and smooth the top.
  7. In a separate small bowl, mix together the pumpkin puree, egg yolk, sugar, flour, cinnamon, ginger, nutmeg, and salt until smooth.
  8. Drop spoonfuls of the pumpkin mixture over the chocolate batter.
  9. Drag a knife through the batters in a zigzag pattern to create a marble effect.
  10. Bake for 30 to 35 minutes until the edges set and the centre shows moist crumbs on a toothpick.
  11. Cool the brownies in the pan on a wire rack for at least 1 hour before slicing.
