Description

These fudgy pumpkin marbled brownies combine a dark cocoa brownie base with a warm pumpkin spice swirl! Made in an 8×8 pan without an electric mixer, they bake up chewy, dense and thick!


Ingredients

Chocolate Batter

  • 3/4 cup (170 g) unsalted butter, melted
  • 4 oz (115 g) semisweet or bittersweet chocolate, chopped
  • 2 large eggs
  • 3/4 cup (150 g) granulated sugar
  • 1 tsp (5 ml) vanilla extract
  • 2/3 cup (85 g) all purpose flour
  • 1/3 cup (28 g) unsweetened cocoa powder
  • 1/2 tsp (3 g) salt

Pumpkin Swirl

  • 1/2 cup (120 g) pumpkin puree, make sure this is pure pumpkin, not pie filling
  • 1 large egg yolk
  • 3 tbsp (38 g) granulated sugar
  • 2 tbsp (16 g) all purpose flour
  • 1/2 tsp (1 g) ground cinnamon
  • 1/4 tsp (0.5 g) ground ginger
  • 1/8 tsp (0.3 g) ground nutmeg
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Melt the butter and chopped chocolate together in a heatproof bowl until smooth. Set it aside to cool slightly.
  3. Whisk the eggs and granulated sugar in a large bowl for 3 minutes until the mixture appears pale and thickened.
  4. Whisk the cooled chocolate mixture and vanilla extract into the eggs.
  5. Sift the flour, cocoa powder, and salt into the chocolate mixture and fold until combined.
  6. Pour the chocolate batter into the prepared pan and smooth the top.
  7. In a separate small bowl, mix together the pumpkin puree, egg yolk, sugar, flour, cinnamon, ginger, nutmeg, and salt until smooth.
  8. Drop spoonfuls of the pumpkin mixture over the chocolate batter.
  9. Drag a knife through the batters in a zigzag pattern to create a marble effect.
  10. Bake for 30 to 35 minutes until the edges set and the centre shows moist crumbs on a toothpick.
  11. Cool the brownies in the pan on a wire rack for at least 1 hour before slicing.

Notes

  • Use a sharp knife and wipe the blade with a damp cloth between cuts to get clean lines on the brownies.
  • Keep these in an airtight container for up to 4 days. If you prefer a denser texture, store them in the refrigerator.
